THIS Indian-inspired salad, also known as raita, is commonly eaten as an accompaniment to hot curries and dal (here). It is delicious as a side dish for grilled foods and stews. And it makes a wonderful dip for pita (if no need to be gluten-free), corn chips, and veggies. For an extra boost, throw in some sunflower seeds. This salad keeps for two days refrigerated.
1½ cups plain Greek yogurt
1 garlic clove, minced, or ½ teaspoon garlic powder
½ teaspoon roasted ground cumin
2 tablespoons thinly sliced fresh mint leaves, or 2 teaspoons dried
1 cup grated cucumber (gently squeeze out the juice)
½ cup tomatoes, seeded and cut into a small dice
Salt and freshly ground black pepper
• Combine all the ingredients in a bowl and stir. Refrigerate for 1 hour before serving to allow the flavors to develop.
