CHEESE toasts are open-faced grilled cheese sandwiches, nothing fancy, just plain good. You can use any type of bread or cheese. If you like your bread crisp, toast both sides. For more punch, sprinkle the toasts with chopped fresh basil, dried Italian seasoning, or a pinch of paprika or chili flakes. Enjoy any time of day.
1 slice country-style whole-grain bread
Dijon mustard (optional)
2 slices hard cheese, such as Swiss or provolone
2 tomato slices
4 cucumber slices
¼ cup baby greens
• Preheat the broiler or toaster oven to HIGH. Lightly toast the bread on both sides. Spread a bit of Dijon, if using, on one side of the bread, then top with the cheese and broil just until the cheese melts and bubbles. Top with the tomato and cucumber slices and the baby greens.
