With just four ingredients and set-it-and-forget-it instructions, these little foil-wrapped gifts are a great way to expand your cabbage repertoire beyond summer slaw and St. Patrick’s Day fare. Cabbage is an excellent source of vitamin C, fiber, and potassium. But wait, there’s more! It’s also chock-full of anthocyanins (found in red cabbage) and amino acids like glutamine that help lower the risk of cancers and decrease inflammation.
Serves 4 | Prep time: 10 minutes | Cook time: 45 minutes
1 head cabbage, quartered, core intact
4 tablespoons sesame oil, divided
4 tablespoons low-sodium soy sauce, divided
2 tablespoons low-sodium vegetable broth, divided

Preheat the oven to 400°F. |

Place each cabbage wedge on a piece of aluminum foil. |

Drizzle the sides of each wedge with 1 tablespoon of sesame oil and soy sauce and ½ tablespoon of vegetable broth. |

Wrap each foil packet tightly. Place on a sheet pan. |
5.

Roast the packets in the oven for 45 minutes. |
