«Chinese plum sauce»

Plum sauce with ginger and spice flavor. It will perfectly complement any meat and poultry dishes, add an Asian accent to your favorite dishes.

Ingredients:
- Pitted plums 500g
- Sugar 70g
- Rice vinegar 50 ml.
- Soy sauce 60 ml.
- Ginger (grated) 20g
- Garlic 2 cloves
- Coriander (powder) 1 tsp.
- Star anise 1 piece
- Cinnamon 1 stick.
Method
1)
Place all ingredients in a heavy-bottomed saucepan. Put the saucepan over medium heat, bring to a boil and cook for 30 min. The plums should become soft.

Remove the pan from the stove, remove the cinnamon and anise. Grind the sauce in a blender until smooth.

Pour hot sauce into sterilized jars and close with sterilized lids.

Turn the sauce jars upside down and wrap them in a blanket or large towel. Leave in this form until completely cooled. This will improve the conservation process.
Turn cooled jars back and store in a cool place for up to 6 months.
NB
: Sterilization of cans
Wash jars and lids well and put in a cold oven. Heat the oven to 110° (Celsius) or 230°
(Fahrenheit) and wait until all the water from the cans and lids has evaporated. Jars and lids are ready to use.
