FROZEN DARK CHOCOLATE SHAKE

THIS SMOOTHIE can be made in a flash, and who doesn’t love a chocolate shake for dessert? Additionally, when the fat and calories in this smoothie are compared to the fat and calories of a traditional chocolate shake… well, I’ll let the numbers do the talking.

Yield: Four 16-ounce dessert smoothies

Prep time: about 2 minutes

Blend time: about 3 minutes

Ingredients:

1½ cups cold water

½  cup plus 2 tablespoons dark unsweetened cocoa powder (such as Hershey’s Special Dark)

3   tablespoons organic fat-free milk powder

1¼ boxes (5 tablespoons) instant sugar-free chocolate pudding mix (such as Jell-O)

12 packets monk fruit extract (such as Monk Fruit In The Raw)

     Pinch of salt

6½ cups crushed or small cubes of ice

Method:

1. Place the water, cocoa, monk fruit extract, and milk powder in a blender and blend until smooth, about 30 seconds. Add the pudding mix and blend on low until very thick, about 30 seconds. Shut off the blender.

2. Add the ice to the blender, turn on high, and blend until smooth but still cold enough to remain thick, 30 to 45 seconds. Pour into four pint glasses and serve.
