FRESH STRAWBERRIES WITH SUGAR-FREE CHOCOLATE SAUCE

THIS IS A KILLER sauce for all sorts of things: use it for chocolate milk, ice cream toppings, or drizzled over any fruit you like for a super-low-calorie sweet tooth suppressor!

Yield: Four 1-ounce servings

Prep time: about 3 minutes

Blend time: about 1 minute

Ingredients:

½  cup water

     Pinch of salt

1   tablespoon light agave nectar

4   packets monk fruit extract (such as Monk Fruit In The Raw)

3   tablespoons plus 1 teaspoon dark unsweetened cocoa powder (such as Hershey’s Special Dark)

¼  plus teaspoon xanthan gum (see Tip below)

2   cups fresh halved strawberries, cut into bite-sized pieces

Method:

1. Add the water, salt, agave, monk fruit extract, and cocoa powder to a blender and blend on low until everything is incorporated, about 1 minute. Sprinkle the xanthan gum while blender is still running and blend until thick, about another minute, and turn off the blender.

2. Distribute ½ cup of strawberries each into 4 small bowls and evenly pour the sauce over each dish.

Tip:

• The amount of xanthan gum may vary depending on the brand and how it was stored.
