I LOVE this recipe because it delivers a jolt of nutrition in a smoothie that fills you up. The base is made with low-calorie-density cucumbers, a little enzyme-rich apple to cover the taste of the greens, and a little natural sweetness from carrots, and I like to use the fast low-calorie thickening power of instant sugar-free pudding.

Ingredients:

2   cups water

½  cup carrots, chopped

2   cups kale

2   cups green cucumbers, skin on, cut into large chunks

2   cups Granny Smith apples, skin on, cut into large chunks

½  package instant sugar-free banana cream pudding (such as Jell-O)

2   cups ice

4   packets monk fruit extract (such as Monk Fruit In The Raw; optional)

Method:

1. Add the water and carrots to a blender and blend until smooth; add the kale, cucumbers, apples, and monk fruit extract (if using) and blend until smooth, about 30 more seconds. Add the pudding mix and blend until thickened, about 30 seconds. Add the ice and blend until smooth. Serve.

Tip:

• Use the monk fruit extract if you like things a bit sweeter.
