CRUNCHY, SALTY SNACKS are so easy to enjoy but just so bad for our bodies. Here I’ve eliminated the usual fat with a microwave technique and replaced the white potato with a much more nutritious sweet potato for this wonderful chip seasoned with one of my favorite seasoning mixes! These are a great alternative to fries with my RD’s Big Burger with All the Fixin’s.
Yield: 4 servings
Prep time: about 5 minutes
Cooking time: about 5 minutes
Olive oil cooking spray (such as Pam)
½ teaspoon Old Bay seasoning
6 ounces sweet potato, peeled and sliced ⅛ inch thick on a mandoline
1. Spray a large microwave-safe plate with 1 second of cooking spray and sprinkle a little Old Bay seasoning on the bottom of the plate. Place some of the sweet potato slices on the plate in a single layer. Spray with 1 second of the cooking spray and then sprinkle each slice with some Old Bay. Microwave on high heat for 1 minute. Flip over each chip and microwave until the chips are lightly browned and crisp, about another minute.
2. Repeat the first step until all the remaining potato slices are cooked. Serve immediately or store in an airtight container for later use.
• Try some other flavors and spices, like your favorite BBQ spice rub, or curry, or you can find some really fine flavors online, like sour cream and onion!
