Tropical Greek Yogurt Parfait

Who needs eggs for protein! Jump-start your day with an energy-boosting breakfast. With layers of Greek yogurt and crunchy coconut, this parfait is a protein powerhouse!

Ingredients

  1. 1 cup plain Greek yogurt
  2. 2 teaspoons pure honey
  3. 1/2 teaspoon vanilla extract
  4. 1/2 cup frozen diced mango, thawed
  5. 1/2 cup frozen diced pineapple, thawed
  6. 1/4 cup toasted coconut flakes

  1. Combine the Greek yogurt, honey, and vanilla extract in a mixing bowl. Set aside.
  2. Assemble your parfait by spreading one-third of the yogurt at the bottom of a parfait glass or bowl. Add one-third of the mango and pineapple. Repeat layers until finished.
  3. Top with toasted coconut flakes and serve immediately.
