Ingredients
1 pound (16 oz) carrots
2 tablespoons oil, such as olive oil
1 teaspoon salt
2 tablespoons pure maple syrup

vegetable peeler

Preheat oven to 450°F. Line a baking sheet with parchment paper and set aside.
Peel the carrots with a vegetable peeler. Using a knife, cut the tops off each carrot. Then cut each carrot into 2-inch (5.1-cm) pieces.
Place carrots on baking sheet and drizzle with oil and salt.
Bake in oven for about 10 minutes or until carrots begin to brown.
Remove from oven and drizzle with maple syrup.
Increase oven temperature to 475°F. Bake an additional five to 10 minutes, or until the carrots have a deep brown color. Check after five minutes to avoid burning.
