2 cups coconut milk
1/2 cup sugar
3 tablespoons arrowroot powder
2 teaspoons vanilla extract
pinch of kosher salt

Place the coconut milk in a saucepan over medium heat. Bring to a simmer.
While the coconut milk heats, combine the remaining ingredients in a mixing bowl.
When the milk begins to simmer, slowly pour the sugar mixture into the saucepan, whisking while pouring to dissolve.
Continue to stir gently until the mixture begins to thicken.
Pour pudding into a serving bowl. Chill for at least four hours before serving.
