Apple pie is a classic American dessert, but have you ever tried apple cake? Besides being delicious, apples are also high in Vitamin C and fiber. Enjoy making this cake studded with pieces of autumn’s favorite fruit!
Ingredients

2 cups wheat-free flour blend
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups sugar
3/4 cup light olive oil
1 teaspoon vanilla extract
3 eggs
3 tart apples

8 x 8-inch (20 x 20-cm) baking dish
2 medium mixing bowls
measuring cups/spoons
electric mixer
vegetable peeler

Preheat oven to 350° F. Spritz the baking dish lightly with cooking spray and set aside.
In a mixing bowl, combine the wheat-free flour blend, cinnamon, baking soda, baking powder, and salt.
In another mixing bowl, add the sugar, oil, vanilla extract, and eggs.
Using an electric mixer set to medium speed, mix the wet ingredients until blended.
Pour the wet ingredients into the bowl with dry ingredients. Mix on medium speed until smooth. Set aside.
Peel the apples with a vegetable peeler. Chop into small pieces.
Transfer half of the batter into the baking dish. Evenly sprinkle apples on top. Pour the remaining batter over them.
Place in the oven and bake for about 45 minutes, or until a toothpick comes out clean when inserted.
