Ingredients

3 Pounds of bone-in beef short ribs

2 Tablespoons of vegetable or high smoking point oil

1Pinch of salt

1 Pinch of freshly ground black pepper

1 large sliced onion
-
4 Minced garlic
-
3 Cups of wine or of low sodium broth

3 to 4 sprigs of fresh herbs, like thyme or rosemary
Directions

Start by heating the oven to a temperature of 325°F; then season the meat and place a rack in the lower third rack of the oven

Brush each of the short ribs with the oil; then generously sprinkle with the salt and the pepper.

Sauté the short ribs in a deep large Dutch oven over a medium high heat

Add the short beef ribs in one layer making sure to leave room between each of the ribs

Sear the short ribs trying not to move it for several minutes on each of the sides for about 15 minutes

Cook the onions; then lower the heat and add in the onion and the garlic; then cook for about 5 minutes

Add in the liquid; then beer, the wine or the broth and let simmer
-
To braise in the oven; add the wine or the broth to the meat; then cover and place into the oven
-
Braise for about 2 hours; and when done, remove the meat from the oven and let rest for about 20 minutes
