Ingredients

3 to 5 lbs of boneless pork shoulder

1 Tbsp of vegetable oil

1 bunch of minced cilantro

1 Wedged lime

For the marinade:

½ cup of orange juice
-
½ cup of lime juice

15 Minced garlic cloves
-
1 Tbsp of cumin
-
2 Tbsp of salt
-
1 Tbsp of black pepper
-
½ cup of chopped parsley or cilantro

4 Tbsp of olive oil

1 Pinch of salt
Directions

Combine all the ingredients of the marinade in a large ziplock bag or a large bowl; then debone and deskin the pork shoulder

Add to the marinade and turn to coat very well; then marinate for about 1 hour

Remove the roast; then truss with a string and season the meat with the salt

Pre heat the oven to a temperature of about 400°F; then in a large Dutch oven and over a medium-high heat, heat about 1 tbsp of the vegetable oil and start searing the pork with the skin side up in your Dutch oven.

Season the top with pepper and salt

Place the roast in your Dutch oven and cook for about 1 hour; then after about 1 hour; reduce the oven temperature to about 300°F and cook for about 4 hours

Remove the pork roast from the oven and cover with a lid; then let rest
