Chocolate Chia Seed Pudding

The chia seeds and milk in this delicious treat come together to create a beautiful pudding-like texture that is chocolatey and dense with a bold, nutty flavor.

MAKES: 2 SERVINGS

SERVING SIZE: 12 cup

1 cup (8fl oz/240ml) unsweetened coconut milk

3 tsp confectioners erythritol

1 tsp unsweetened cocoa powder

2 tbsp sugar-free, all-natural almond butter, divided

14 cup (1.2oz/40g) chia seeds

2 tsp unsweetened cocoa nibs

2 tsp unsweetened coconut flakes

1. In a medium mason jar, combine the coconut milk, erythritol, cocoa powder, and 1 tablespoon of the almond butter. Tightly seal the jar and shake vigorously for 30 seconds, or until the almond butter has completely dissolved into the milk.

2. Remove the lid and add the chia seeds. Reseal the jar and shake for 1 additional minute, then transfer to the fridge to set for 5 minutes. Shake again for 1 minute. Repeat this process twice more, then leave the mixture in the fridge to set for a minimum of 2 hours or until the chia seeds become soft and the mixture thickens.

3. Divide the pudding between two serving bowls. Top with the cocoa nibs and coconut flakes, then drizzle the remaining almond butter over the top. Serve promptly, or store covered in the fridge for up to 4 days.

Tip You can substitute unsweetened almond milk or any other low-carb, unsweetened nut milk for the coconut milk.
