Strawberry Cashew Bars

These delicious bars are dairy-free and simple to make. They’re the perfect treat to enjoy with a glass of dry champagne on a hot summer afternoon.

For the base

112 cups (5oz/150g) raw almonds

34 cup (3oz/90g) raw walnuts

12 tsp sea salt

10 drops stevia extract

For the filling

2 cups (7oz/200g) raw, unsalted cashews

13.5fl oz (400ml) can unsweetened coconut cream

2 tbsp coconut oil

Juice of 12 lemon

1 tsp vanilla extract

30 drops stevia extract

9oz (250g) fresh strawberries, divided

2 tsp powdered gelatin

1. Place the cashews in a large bowl and cover with water. Set aside to soak for a minimum of 4 hours.

2. Make the base by combining the almonds, walnuts, sea salt, and stevia extract in a food processor. Pulse just until a semi-fine texture is achieved.

3. Line a 11 x 7-inch (28 x 18cm) baking pan with parchment paper. Press the base mixture flat into the bottom of the pan. Transfer to the fridge to set for 30 minutes.

4. While the base is setting, make the filling by combining the soaked cashews, coconut cream, coconut oil, lemon juice, vanilla extract, stevia extract, and half of the strawberries in a food processor. Begin processing while slowly adding the gelatin to the mixture. Process until a smooth consistency is achieved and no lumps remain.

5. Evenly spread the filling over the base. Return the pan to the fridge to allow the bars to set for 30 additional minutes. While the bars are setting, thinly slice the remaining strawberries.

6. Once the bars are set, place the sliced strawberries in a single layer on top of the bars, then return the bars to the fridge to set for an additional 2 hours.

7. Slice into 12 equal-sized bars and serve promptly. (These are best eaten the same day they’re prepared, but they can be stored in an airtight container in the fridge for up to 3 days.)

Tip To make these vegan, substitute an equal amount of agar agar for the gelatin.
