Iced Cinnamon Rolls

These sweet and gooey rolls are made from a unique dough that combines mozzarella, cream cheese, and almond flour. It’s this unique twist that gives them their fantastic flavor!

For the rolls

112 cups (6oz/170g) preshredded mozzarella cheese

2 tbsp full-fat cream cheese

1 large egg

34 cups (70g/2.2oz) almond flour

2 tbsp granular erythritol, divided

1 tsp ground cinnamon

1 tbsp warm water

For the icing

1 tbsp full-fat cream cheese

1 tbsp heavy cream

1 tbsp confectioners erythritol

1. Preheat the oven to 355°F (180°C).

2. Combine the mozzarella and cream cheese in a microwave-safe bowl. Heat on high in 30 second increments until the mixture is completely melted, about 90 seconds.

3. Add the egg, almond flour, and 1 tablespoon of the erythritol. Mix until the ingredients are a uniform color and the texture becomes slightly sticky. Place the dough between two sheets of parchment paper and roll it into the shape of a rectangle. Place the flattened dough on a large baking pan, transfer to the oven to bake for 5 minutes, then set aside to cool for 10 minutes.

4. In a small bowl, combine the remaining erythritol, cinnamon, and water. Stir until well combined, then spread the mixture over one side of the dough sheet.

5. Starting from one long edge, roll the dough up into a large roll, then cut the dough into smaller rolls that are each about the width of 2 fingers. Place the rolls on a large baking sheet, rolled sides up, and transfer to the oven to bake for an additional 7 minutes.

6. While the rolls are baking, make the icing by combining the cream cheese, heavy cream, and erythritol in a small bowl. Mix well, then transfer the mixture to a piping bag.

7. Remove the rolls from the oven and let them cool for 15 minutes before piping the icing over the top. Store in an airtight container in the fridge for up to 5 days.

Tip These rolls are quite small, but they’re made mostly of dense cheese, so they will definitely curb your hunger and satisfy your sweet tooth!
