These single-serving apple crumbles are delicious and easy to make! Because apple contains too many sugars, this recipe uses chayote squash, which has a similar texture to apple.

SERVING SIZE: 1 (7Oz/200g)
2 medium chayote squashes (approximately 10oz/300g), peeled and diced
1⁄3 cup (1.8oz/50g) granular erythritol
1⁄2 tsp ground cinnamon
1 tsp ground ginger
1⁄4 tsp ground nutmeg
6 tbsp finely ground walnuts
2 tbsp sugar-free coconut yogurt
1. Place the chayote in a large pot and cover completely with water. Add the erythritol, cinnamon, ginger, and nutmeg. Bring the ingredients to a boil, then reduce the heat to low and simmer for 5 minutes. Remove the pot from the heat and drain.
2. Divide the chayote between two serving bowls and top each with 3 tablespoons of the ground walnuts and 1 tablespoon of the coconut yogurt.
3. Serve warm, or cover and chill in the fridge for 2 hours prior to serving. Cover with plastic wrap and store in the fridge for up to 4 days.
Tip If you’re missing a spice, you can omit the cinnamon, ginger, and nutmeg, and substitute 13⁄4 teaspoons pumpkin pie spice. If you can’t find chayote squash, you can substitute an equal amount of peeled and diced jicama.
