Traditional fudge is made with condensed milk, but this easy-to-make fudge uses peanut butter and coconut oil to help make it healthier and also help enhance the fudgy flavor.

1⁄2 cup (4oz/120g) all-natural, sugar-free peanut butter
1⁄4 cup (1.2oz/40g) coconut oil
3 tbsp unsweetened cocoa powder
1⁄4 tsp vanilla extract
20 drops stevia extract
Pinch of sea salt
1. In a large mixing bowl, combine the peanut butter, coconut oil, vanilla extract, and cocoa powder. Stir until well combined.
2. Add the stevia, 5 drops at a time, stirring the mixture each time, until the stevia is fully integrated into the mixture.
3. Add the sea salt, stir, then transfer the mixture to 8 ice cube tray cups. Transfer to the freezer to set for 1 hour. Store in an airtight container in the freezer for up to 1 week.
Tip If desired, an equal amount of almond butter can be substituted for the peanut butter. For a different flavor, eliminate the vanilla extract and stevia extract and add 1⁄4 teaspoon hazelnut-flavored stevia extract.
