Little sandwiches

MAKES 6
6 mini crispy bread rolls
90 ml (3 fl oz) allioli or ready-made garlic mayonnaise or sauce
12 slices jamón or prosciutto
300 g (10½ oz) pimiento de picillo, cut into strips
150 g (5½ oz) Manchego cheese, thinly sliced
Cut open the bread rolls with a bread knife, leaving them hinged, then spread with the garlic mayonnaise or sauce.
Put two slices of jamón on top of the mayonnaise or sauce, followed by some strips of pimiento and slices of Manchego. Serve immediately.
