Oysters and lemon herb dressing

24 fresh oysters on the half shell
1 tablespoon dill, chopped
1 garlic clove, crushed
1 tablespoon finely chopped flat-leaf (Italian) parsley
2 teaspoons finely chopped chives
2 tablespoons lemon juice
3 tablespoons extra virgin olive oil
brown bread, cut into small cubes, to serve
Remove the oysters from their shells. Wash the shells in hot water and pat dry. Replace the oysters and cover with a damp cloth in the refrigerator.
Put the dill, garlic, parsley, chives, lemon juice and oil in a bowl and season to taste with salt and cracked black pepper. Mix together well.
Drizzle a little of the dressing over each oyster and serve with the cubes of brown bread.
