Olive basil cheese spread

PREPARATION  15 minutes

MAKES  500 g (1 lb 2 oz/2 cups)

250 g (9 oz/1 cup) cream cheese, softened

200 g (7 oz) feta cheese

20 g (¾ oz) basil leaves

60 ml (2 fl oz/¼ cup) olive oil

15 kalamata olives, pitted and roughly chopped

crusty bread, to serve

Combine the cream cheese, feta, basil, 1 tablespoon of the oil and ¼ teaspoon cracked black pepper in a bowl and then mix until smooth.

Fold in the olives and spoon into a serving bowl. Smooth the top with the back of the spoon and pour the remaining oil over the top. Garnish with a little more cracked pepper and serve with crusty bread.
