CHICKEN FAJITAS

A packet of fajita spices will last ages in the cupboard and make this dish interesting and tasty.

2 tbsp thinly sliced onion

¼ tsp finely chopped garlic

½ tsp olive oil

½ red pepper, deseeded and very thinly sliced

3–4 chicken goujons, cut into shreds

½ tsp fajita seasoning

2–3 tbsp chicken stock

freshly ground black pepper

1–2 flour tortillas

guacamole (see page 88), tomato salsa and soured cream, to serve

1. Put the onion, garlic, oil, red pepper, chicken and fajita seasoning in a large mug and mix together well. Microwave for 1½ minutes.

2. Stir well, then microwave for a further 1½ minutes.

3. Stir again, then add 2 tablespoons of the stock, season with pepper and microwave for 1 minute until the chicken is cooked, adding the remaining stock or a little boiling water if the mixture looks too dry.

4. Leave to stand while you warm the tortillas for a few seconds in the microwave, then serve the chicken with the tortillas, guacamole, salsa and soured cream.
