This makes a lovely cheesecake with a sharp tang of lemon. Allow time for it to cool and chill.
3 tbsp cream cheese
1 egg
½ tsp lemon juice
¼ tsp vanilla extract
2 tbsp caster sugar
a few strawberries, sliced
1 tbsp double or whipping cream, whipped
1 tsp chopped nuts
1. Put the cheese, egg, lemon juice, vanilla and caster sugar in a large mug and mix together well. Microwave in 30-second bursts for 1½ minutes, stirring after each burst.
2. Whisk again – the mixture will still be very soft – then cool. Chill in the fridge until ready to serve.
3. Arrange the strawberries on top, spoon over the cream and sprinkle with chopped nuts to finish.
