Apple Oatmeal Pancakes

Pancakes are a fun treat that can be prepared in a wide variety of ways. This recipe has added protein and fruit to keep you full and energized.

INGREDIENTS | MAKES 4 PANCAKES

6 large egg whites

1/2 cup oatmeal

1 tablespoon unsweetened applesauce

1 teaspoon cinnamon

1 packet stevia

1/4 teaspoon baking soda

1 teaspoon olive oil

1 medium apple, diced

1. Heat a medium nonstick pan over medium heat for 5 minutes.

2. Combine all ingredients except oil and apple in a blender, blending until mixed well.

3. Lightly oil the pan, coating all surfaces.

4. Slowly pour 1/4 of batter into the pan.

5. When mixture starts to bubble, top with 1/4 of apples and flip.

6. Cook 1 more minute, then serve immediately.
