INGREDIENTS | MAKES 12 MUFFINS
1 1/4 cups whole-wheat flour
3/4 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons unsalted butter, softened
1/4 cup brown sugar (or stevia alternative)
2 large egg whites
3 ripe medium bananas
1/4 cup pure maple syrup
2 tablespoons unsweetened applesauce
1/2 teaspoon vanilla extract
1/3 cup crushed pecans
1. Preheat oven to 325°F.
2. Line a 12-cup muffin tin with baking liners.
3. Combine flour, baking soda, and salt in a large bowl and mix well.
4. In a separate large bowl, mix butter and brown sugar until smooth.
5. Add egg whites, bananas, maple syrup, applesauce, and vanilla and mix by hand or with an electric mixer until well blended.
6. Gently stir in flour mixture until combined and then evenly divide into lined muffin cups.
7. Sprinkle muffin tops with pecans and bake 30–35 minutes, until a toothpick inserted into the center comes out clean.
