INGREDIENTS | SERVES 4
2 teaspoons butter
1/2 cup chopped shallots
1/2 pound asparagus, cooked and chopped
3 large eggs
5 large egg whites
2 tablespoons grated Romano cheese
1/4 cup low-fat shredded Swiss cheese
1 tablespoon skim milk
1 teaspoon salt
1 teaspoon freshly ground black pepper
1. Preheat oven to 350°F.
2. Heat butter in a 10-inch cast-iron skillet over medium-low heat. Sauté shallots 5 minutes and then add asparagus.
3. In a separate bowl, combine eggs, egg whites, Romano cheese, Swiss cheese, milk, salt, and pepper.
4. Pour egg mixture over shallots and asparagus in the skillet and continue to cook about 5 minutes.
5. Transfer skillet to oven and cook 16–18 minutes or until frittata is completely cooked though.
