Turkey and Spinach Focaccia Sandwich

This sandwich provides lean protein from the turkey, as well as micronutrients from the spinach and tomatoes. For added flavor and texture, lightly toast the focaccia bread slices before preparing.

2 tablespoons low-fat mayonnaise

2 tablespoons chopped fresh basil

2 tablespoons sun-dried tomatoes

1/4 teaspoon crushed red pepper

4 slices focaccia bread

8 ounces sliced turkey

1 cup spinach leaves

1. In a small bowl, mix mayonnaise, basil, tomatoes, and crushed red pepper. Divide the mixture in half.

2. Build sandwiches by layering the spread, turkey, and spinach leaves.
