Avocado Southwestern Salad

This filling, Southwestern-style salad is packed with healthy fats from the avocado and beans and makes the perfect side dish or stand-alone meal.

INGREDIENTS | SERVES 4

1/4 cup olive oil

1/4 cup lime juice

1/2 teaspoon ground cumin

1 teaspoon salt

1 teaspoon freshly ground black pepper

2 bags (about 12 cups) romaine lettuce

2 medium avocados, cubed

1 (15.5-ounce) can pinto beans, drained and rinsed

1 cup cooked corn kernels

1/2 medium red onion, peeled and diced

1/2 cup chopped fresh cilantro

1. Dressing: whisk together oil, lime juice, cumin, salt, and pepper until emulsified.

2. Toss lettuce, avocados, beans, corn, onion, and cilantro in a large bowl.

3. Mix dressing with salad and serve.
