Zucchini and Potato Bake

INGREDIENTS | SERVES 4

2 medium zucchini, sliced

4 medium potatoes, peeled and cut into large chunks

1 medium red bell pepper, seeded and chopped

1 clove garlic, minced

1/2 cup bread crumbs

1/4 cup olive oil

1 teaspoon paprika

1 teaspoon salt

1 teaspoon freshly ground black pepper

1. Preheat oven to 400°F.

2. In a medium baking pan, toss all ingredients together, spreading evenly over the pan.

3. Bake 1 hour or until potatoes are tender, stirring occasionally.
