This quick sandwich combines fresh tomatoes and an herb spread for a delicious, nontraditional, healthy sandwich.

INGREDIENTS | SERVES 2
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 large tomato, sliced
3 tablespoons reduced-fat mayonnaise
1/2 teaspoon dried parsley
1/4 teaspoon dried oregano
1/4 teaspoon freshly ground black pepper
3 tablespoons grated vegetarian Parmesan cheese, divided
4 slices sprouted or whole-grain bread, lightly toasted
1. Preheat oven to broil.
2. Add olive oil and vinegar to a small bowl and whisk well.
3. Add tomatoes, cover, and marinate 30–60 minutes.
4. In a separate small bowl, mix mayonnaise, parsley, oregano, pepper, and 2 teaspoons Parmesan.
5. Place bread slices on a baking sheet and evenly spread mayonnaise mixture over each slice, topping 2 of the slices with the marinated tomatoes. Place remaining 2 bread slices on top of tomatoes, mayonnaise side down.
6. Broil 5 minutes or until cheese turns golden brown. Serve immediately.
