Strawberry and Feta Summer Salad

This light and simple Mediterranean salad can be prepared in a matter of minutes and pairs well with any of the soups or sandwiches in this chapter.

INGREDIENTS | SERVES 2

2 cloves garlic, minced

1 teaspoon honey

1 teaspoon Dijon mustard

1/4 cup raspberry vinaigrette

2 tablespoons balsamic vinegar

2 tablespoons brown sugar

1 cup olive oil

4 cups romaine lettuce

2 cups sliced strawberries

1 cup crumbled feta cheese

1. Dressing: whisk together garlic, honey, mustard, raspberry vinaigrette, balsamic vinegar, brown sugar, and olive oil until well blended.

2. Toss lettuce, strawberries, and feta cheese in a separate large bowl.

3. Divide salad between 2 serving bowls, top with dressing, and serve.
