Baked Mozzarella Sticks

This healthy version of a popular appetizer is very easy to prepare at home and makes a great snack or side dish. Enjoy plain or serve with marinara sauce for dipping.

INGREDIENTS | MAKES 24 STICKS

12 sticks reduced-fat mozzarella string cheese, cut in half

1/2 cup egg whites

2 tablespoons flour

1/2 cup Italian bread crumbs

1/2 cup panko bread crumbs

2 teaspoons vegetarian Parmesan cheese

1 tablespoon dried parsley

1. Freeze mozzarella pieces at least 1 hour.

2. Place egg whites in a medium bowl and flour in a medium bowl.

3. In a third medium bowl, mix Italian bread crumbs, panko bread crumbs, Parmesan, and parsley.

4. Dip frozen mozzarella pieces in flour, roll in egg whites, then cover well with bread crumb mix.

5. Place the sticks on a baking sheet covered with parchment paper and freeze 1 hour.

6. When ready to eat, bake in a 400°F oven 10 minutes, turning halfway through.
