INGREDIENTS | SERVES 10
1 (10-ounce) package frozen spinach, thawed and drained
1/2 cup light sour cream
5 tablespoons light mayonnaise
1/3 cup grated vegetarian Parmesan cheese
1/4 cup chopped scallions
1 clove garlic, minced
1 cup shredded low-fat mozzarella cheese
1. Preheat oven to 375°F.
2. Combine all ingredients in a medium bowl, mixing well.
3. Transfer to a 9" × 9" glass baking dish and cook 20–25 minutes until cheese is completely melted.
