Bourbon Lime Salmon

Salmon is one of the best natural sources of omega-3 fatty acids, and this Asian-style recipe is easy to prepare in bulk and eat throughout the week.

INGREDIENTS | SERVES 8

1 cup packed brown sugar or brown sugar substitute

6 tablespoons bourbon

1/4 cup soy sauce

2 tablespoons lime juice

2 teaspoons freshly grated ginger

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

2 cloves garlic, crushed

8 (6-ounce) salmon fillets

4 teaspoons sesame seeds

1/2 cup sliced green onions

1. Combine brown sugar, bourbon, soy sauce, lime juice, ginger, salt, pepper, and garlic in a large resealable plastic bag. Marinate salmon fillets in the bag at least 30 minutes in the refrigerator.

2. When ready to cook, preheat the broiler.

3. Transfer fish to broiler pan and discard marinade. Broil fish 10–12 minutes or until it flakes easily.

4. Sprinkle fish with sesame seeds and green onions and serve.
