Spicy Grilled Shrimp Skewers

Shrimp is a mild-flavored food, but the spicy Asian sauce in this recipe brings the heat. When served warm and fresh off the grill, these skewers are the perfect pairing for a summer salad.

INGREDIENTS | SERVES 4

2 tablespoons finely chopped scallions

1 teaspoon sriracha hot sauce

1 1/2 tablespoons Thai sweet chili sauce

2 1/2 tablespoons light mayonnaise

40 large raw shrimp, shelled and deveined

2 teaspoons freshly ground black pepper

1. Preheat grill to medium.

2. In a small bowl, mix scallions, hot sauce, Thai sauce, and light mayonnaise, stirring well.

3. Using 8 metal skewers, place 5 shrimp on each skewer and sprinkle with pepper.

4. Grill shrimp skewers 6–8 minutes per side. Remove, coat with sauce, and serve warm.
