Garlic and Herb Seared Salmon

If you want to give your salmon a sear and avoid a traditional baked preparation, this recipe will give you crispy fillets with a fresh garlic flavor.

INGREDIENTS | SERVES 4

4 cloves garlic, crushed

1 teaspoon dried Herbes de Provence

1 teaspoon red wine vinegar

2 tablespoons plus 1 teaspoon olive oil, divided

2 tablespoons Dijon mustard

4 (6-ounce) wild-caught salmon fillets

4 lemon wedges for serving

1. Combine garlic, herbs, vinegar, 1 teaspoon oil, and mustard in a food processor until smooth.

2. Heat remaining 2 tablespoons of oil in a large nonstick skillet over medium-high heat and grill salmon fillets 5 minutes.

3. Flip fillets and cook 3 minutes, spooning half the garlic sauce on the cooked side of each fillet.

4. Flip fillets again, cooking 1 more minute and spreading sauce on the other side of fillets. Flip fillets one last time and cook 1 minute.

5. Remove and serve each fillet with a fresh lemon wedge.
