INGREDIENTS | SERVES 1

1/2 cup cooked pinto beans

2 teaspoons taco seasoning

2 tablespoons medium salsa

1/2 cup cooked rice

1 whole-wheat tortilla

3 ounces cooked chicken, shredded

2 tablespoons low-fat Mexican blend cheese

1. Blend beans, taco seasoning, and salsa in food processor.

2. Spread rice on the tortilla. Top with bean mixture and chicken. Sprinkle cheese on top.

3. Microwave 15–25 seconds or heat in the oven until cheese is melted.
