1/3 cup lemon juice
1/3 cup Dijon mustard
1 tablespoon dried sage
1 tablespoon dried thyme
3 cloves garlic, crushed
4 (4-ounce) boneless, skinless, chicken breasts
Cooking spray
2 scallions, sliced
1. In a small bowl, mix together lemon juice, mustard, sage, thyme, and garlic.
2. Put chicken breasts on a plate. Coat both sides with half the lemon juice mixture and set aside 10 minutes.
3. Coat a large skillet with cooking spray and cook chicken breasts 5 minutes on each side. Use the other half of the lemon juice mixture to coat chicken as it cooks.
4. Scatter scallions over chicken before serving.
