Tuscan-Style Slow Cooker Chicken

This is another delicious slow cooker recipe that adds a bit more flavor than the usual slow-cooked recipe.

INGREDIENTS | SERVES 4

1/4 cup chopped onion

1/2 medium red bell pepper, seeded and cut into strips

1/2 medium green bell pepper, seeded and cut into strips

8 ounces black beans, drained and rinsed

4 (4-ounce) boneless, skinless chicken breasts

2 tablespoons olive oil

1 large tomato, diced

1/4 cup low-sodium chicken broth

1 tablespoon apple cider vinegar

1/2 teaspoon dried oregano

1 clove garlic, crushed

1/4 teaspoon salt

1. Put onion, peppers, and beans in a slow cooker.

2. Place chicken on top of vegetables and beans.

3. In a bowl, stir together oil, tomato, broth, vinegar, oregano, garlic, and salt. Pour mixture over chicken.

4. Cook on low 6–7 hours and then serve.
