INGREDIENTS | SERVES 4
1 pound boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon garlic salt
1 (16-ounce) jar salsa verde
1 1/2 cups shredded low-fat Monterey jack cheese
1/4 cup chopped cilantro
1 medium lime, cut into wedges
1. Preheat oven to 400°F.
2. In 10" × 13" baking dish, arrange chicken breasts. Brush them with oil and season with garlic salt. Pour salsa over chicken, spreading it evenly all over.
3. Bake 30–35 minutes until chicken is fully cooked. Remove from oven, top with cheese, and finish under the broiler 1–2 minutes to melt the cheese.
4. Garnish with cilantro and lime wedges and serve.
