Southwestern Chicken

This chicken goes well with anything. Serve it hot over white rice and fajita vegetables or enjoy it cold, sliced, and served with a salad and avocado.

INGREDIENTS | SERVES 4

1/2 cup olive oil, divided

1/4 cup lime juice

1/4 teaspoon red pepper flakes

1 tablespoon honey

1/2 teaspoon cumin

2 (6-ounce) boneless, skinless chicken breasts

1. In a small bowl, combine 1/4 cup oil, lime juice, red pepper flakes, honey, and cumin and mix well.

2. Place chicken in a medium bowl or dish and pour the dressing on top. Cover and marinate at least 1 hour in the refrigerator.

3. When ready to cook, heat a grill or skillet to medium-high, brush grill with remaining oil using a paper towel and grilling tongs, and cook chicken 6–8 minutes per side or until fully cooked.
