1 (16-ounce) package whole-grain penne
2 tablespoons olive oil
1/4 cup chopped red onion
1 tablespoon chopped garlic
1/4 cup white wine
2 (12-ounce) cans diced tomatoes
1 pound shrimp, peeled and deveined
1 cup grated Parmesan cheese
1. Cook pasta according to package directions and set aside.
2. Heat oil in a medium nonstick skillet over medium-high heat. Add onion and garlic, cooking about 5 minutes until onion becomes tender.
3. Add wine and tomatoes and cook 10 more minutes, stirring frequently.
