Sweet Potato Soup

Sweet potatoes form the base of this delicious soup, and they are one of the healthiest starchy carb sources you can eat, containing fiber and many rich nutrients.

INGREDIENTS | SERVES 4

6 large sweet potatoes, peeled and chopped

1 large onion, peeled and chopped

3 stalks celery, chopped

2 teaspoons poultry seasoning

1 quart chicken stock

2 cups skim milk

1. Add sweet potatoes, onion, celery, and poultry seasoning to a large pot.

2. Add chicken stock and top off with water until vegetables are just covered.

3. Boil until vegetables are soft and tender.

4. Transfer vegetables to a blender, blend softened vegetables until smooth, add milk, and return to pot to heat to desired temperature before serving.

What’s the Best Potato?

All potatoes are very good for you and are easy-to-prepare carb sources, but dark- colored potatoes tend to be richer in vitamins and minerals. Sweet potatoes are full of fiber, vitamin C, and beta-carotene, making them both delicious and very healthy. If you want to mix things up, another healthy potato is the Japanese potato, or purple potato, which has a rich, nutty flavor.
