INGREDIENTS | SERVES 2
2 tablespoons olive oil
1 small yellow onion, peeled and chopped
2 cloves garlic, minced
1 medium cauliflower head, rinsed and chopped
4 cups low-sodium chicken broth
1/2 cup grated Parmesan cheese
1. Heat olive oil in a large saucepan over medium heat and add onion and garlic.
2. After 5 minutes, add cauliflower and chicken stock, bringing to a boil.
3. Reduce heat and simmer 20 minutes or until cauliflower is soft.
4. Transfer mixture to a blender and blend in batches until smooth.
