Using riced cauliflower is a great substitute for traditional rice recipes when you need to lower your daily carb intake.

INGREDIENTS | SERVES 4
1 (10-ounce) bag riced cauliflower (thawed or fresh)
3 tablespoons water
1 medium lime, juiced and zested
1/2 cup chopped cilantro
1. Combine riced cauliflower and water in a large microwave-safe bowl and microwave 3–5 minutes or until cauliflower is soft.
2. Remove and add lime juice, zest, and cilantro to bowl. Mix well before serving.
Low-Carb Rice at Home
Cauliflower is fairly neutral in flavor, particularly when you add other flavors and seasonings to it. If you’re unable to find riced cauliflower at your local store, it’s quite easy to make at home. Simply take a head of cauliflower, chop it up into bits, and run it through the food processor until well-chopped. You can steam up these little bits as a low-carb rice substitute.
