1 medium butternut squash, peeled and cubed
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon salt
1. Preheat oven to 400°F.
2. In a large bowl, toss squash, oil, and garlic until well coated. Spread on a baking sheet and season with salt.
3. Roast 25–30 minutes or until squash has browned.
