Zucchini Fries

If you want a crispy fry recipe without the carbs from potatoes, zucchinis make an excellent substitution.

INGREDIENTS | SERVES 4

1 cup bread crumbs

1/4 teaspoon garlic powder

2 tablespoons grated Parmesan cheese

1/4 teaspoon salt

3 large egg whites, beaten

4 medium zucchinis, peeled and cut into fries

1. Preheat oven to 425°F.

2. Combine bread crumbs, garlic, cheese, and salt in a large bowl. Place egg whites in a separate bowl.

3. Dip zucchini sticks into egg whites, toss in bread crumb mixture to coat, and arrange on a greased baking sheet.

4. Bake 20 minutes or until fries begin to brown, turning halfway through.
