This version of a protein bar combines the flavors of chocolate and coffee for a rich, invigorating, and protein-packed snack.

INGREDIENTS | SERVES 4
3/4 cup dry oatmeal
1/4 cup oat bran
6 large egg whites
1 scoop chocolate protein powder
1/4 teaspoon baking powder
1 teaspoon cocoa powder
1 tablespoon ground coffee
1 packet stevia
1. Preheat oven to 350°F.
2. Combine all ingredients in a blender and mix until smooth, then transfer to a greased 10" × 13" baking dish.
3. Bake 30 minutes and allow to cool before serving, cutting into 4 equal bars.
Is It Okay to Bake with Protein?
You may have read that baking protein “denatures” it, rendering it useless. Exposing whey protein to high heat can indeed denature it, but this doesn’t make it worthless; it just changes its molecular structure.
