Tart Cheesecake Bites

This tart and healthy treat uses the refreshing taste of lemons to mimic the tartness of a traditional cheesecake, with a lot less fat and calories accompanying it.

INGREDIENTS | MAKES 12 BITES

12 reduced-fat vanilla wafers

8 ounces low-fat cream cheese, softened

1/4 cup baking stevia

1 teaspoon vanilla extract

3/4 cup low-fat Greek yogurt

3 tablespoons lemon juice

1 tablespoon lemon zest

2 large egg whites

1. Heat oven to 350°F.

2. Line a muffin tin with baking liners and place a single vanilla wafer into the bottom of each one.

3. Combine cream cheese, stevia, and vanilla in a medium bowl, using a mixer to blend until smooth.

4. Add yogurt, lemon juice, lemon zest, and egg whites and continue to blend until mixed well.

5. Pour evenly into baking liners, filling about halfway.

6. Bake 20–25 minutes and allow to cool in the refrigerator before serving.
